FESTIVE BUTCHERY & MEAT SPECIAL with Angela Gray

Last year we rolled out this course which met with rave reviews and is not to be missed this year.  Expect to learn about butchery but also how to cook meat to perfection.  Students will take home all the dishes and cuts that they prepare themselves.

Festive Ballotine of Free-Range Duck, pomegranate and cranberry relish- completely boned out, stuffed with veal, ham, pistachio
Pork Tenderloin stuffed with truffled mushroom pate, rolled up  in Parma ham and sage and trussed
Layered Boxing Day Pork Pie- (hot water crust pastry)
Gourmet Beef Bourguignon pie
Venison en croute for lunch
