Cauliflower Couscous

Prepare the cauliflower. Remove all the leaves and cut into small pieces. Place in a food processor and pulse to form cous cous sized pieces. Put into a steamer and cook until just soft.

Tip into a warm serving dish and drizzle with the olive oil and sprinkle with sea salt and black pepper. Gently mix in the lemon zest, lemon juice and mint.

2 tablespoons olive oil

1 teaspoon sea salt

1 teaspoon lemon zest

4 tablespoons fresh lemon juice

6 stems of mint, finely chopped
