MASTERCLASS SPECIAL: CLASSIC MEAT

We have introduced some Special Masterclasses for 2016.  Sharpen up your knife skills as you learn to prepare and cook different types of Welsh meat.

This course will guide you through the essential steps in preparing and cooking meat. You will explore a variety of classic cuts, techniques and flavours in this intensive day of preparation and cooking. You will take home a selection of dishes from the class.

Example Menu

* Poached Asian chicken with long stem broccoli and roasted peanuts

* Marinated chicken leg/thigh cooked and smoked on a barbecue with a maple glaze

* Classic beef en croute

* Stuffed pork tenderloin

* Ossobucco with gremolata

Lunch will be prepared together as a group, this will include a de-boned shoulder of Welsh lamb, stuffed, rolled and roasted, served as a taster plate with a variety of accompaniments including sauces, roasted onions in white sauce, mushrooms and parsley, with a good wine gravy.
