CLASSIC FISH

Prepare some classic dishes using the freshest seasonal seafood.  Angela will be sharing some of her favourite dishes and will teach you how to cook fish to perfection. You will learn new skills, knife work and how to balance your dishes so they are deliciously nutritious.  Here’s your menu:-

  • Good Fish Stock
  • Asian Seafood Broth with Crab Won Tons
  • Spiced Moroccan fish Pastilla
  • Seafood Plate with 3 sauces- Hollandaise, Romesco and Salsa Verde (Lunch)
  • Caribbean Salt Fishcakes with Salsa
  • Hot Smoked Fish with Coriander and Chilli Relish

Please bring the following containers with you:-

  • 300ml pot for fish stock
  • 600ml pot for Asian Broth
  • 1 dinner plate or container for the round Pastilla
  • 1 container for the fish cakes + small pot for the salasa
  • 1 container for the smoked fish fillet + pot for the relish
