Baked Fish Provencal – make a delicious ragu, then use beautiful fragrant herbs, confit onion and olives to make this classic dish.
Malbar Fish Curry – roast and blend spices to make a stunning curry base, add onions, mango and creamed coconut for a fabulous finish.
Fish Fillet en Croute – make an aromatic spiced rice and lentil pilaf, wrapped around seasonal fish fillet with spinach, then baked in fillo pastry. Make a green olive, currant and caper salsa to accompany this dish.
Lunch – Hot Smoked Barbecued Salmon with candied lemons, pickled cucumber, Pembrokeshire New Potatoes, Wye Valley Asparagus and a Lemon Butter Sauce.
