Warming and delicious. Garnish with chilli flakes or coriander and serve poori breads.
Serve this with Parsley and Porcini Dumplings. For added intensity, roast the carrots and sweet potato in chunks. Brush them with olive oil, sprinkle with sea salt and cracked pepper. Roast at 200c/180fan/gas 6 until golden and soft through.
Add thick slices of garlic bread around the edge of the casserole, pushing them half way into the sauce. Pop n the oven for 15 minutes to brown the bread- serve with buttered shredded cabbage-yum!
